Shallot + Artichoke Spread

The perfect small plate for your holiday party!


2 sweet onions, roughly chopped

4 shallots, roughly chopped

2 cans of artichokes, roughly chopped

olive oil, as needed

fig balsamic vinegar, as needed (can sub any other infused or regular balsamic)

sea salt + pepper


  1. Heat skillet on medium heat. Coat pan with olive oil. Add roughly chopped onions. Stir frequently and add olive oil as needed. Allow to cook until brown.
  2. Lower heat and add chopped artichokes. Add about 4 T of fig balsamic, sea salt, cracked pepper and stir. Cover and cook on low medium for about 5 minutes.
  3. Stir mixture and add 2 T fig balsamic to achieve caramelized color.
  4. Add sea salt + pepper to taste. Serve on crostini, your favorite cracker or with roasted vegetables.
