Mushrooms + shredded cabbage + bbq sauce. Simple. Easy. Great for any meal, but perfect for Sundays or any day you’re craving that zesty, bbq flavor.
2 large portobello caps; chopped in 2-3inch slivers
3 cups of shredded purple cabbage
~ 1/2 cup bbq sauce of choice (I prefer to make my own or use Wegman’s brand)
2 Ezekiel Organic Burger Buns (option: any roll of choice)
oil of choice; I used infused evoo
Italian spice blend
- Heat 1 tablespoon of oil in skillet. Once warm, add mushrooms slivers and all spices. Stir frequently until mushrooms are cooked through, about 4-5minutes.
- Add in enough bbq sauce to coat mixture lightly. Stir and allow to cook for an additional minute.
- Turn heat off and add in cabbage. Stir until entire mixture is well mixed. Add additional bbq sauce if needed.
- Serve mixture on warm roll and top with raw cabbage.
